Sweet, salty nuts!?
The protein, fats, salts and sugar of this snack is great for on the trail. I took these little suckers out the other day and they were great. They don’t leave you reaching for the water bottle and is a great snack to go with a banana! I made the batch and put them in a Tupperware when they were still warm and they were set by the time i was reaching for them half way up the mountain.
Sweet nutty trail snack
Makes a big batch – 15-20 minutes
- 2 tbsp honey or agave syrup
- 3 tbsp sugar
- 1 tsp peanut butter
- sprinkle of cinnamon
- sprinkle of salty
- 200g mixed nuts and seeds
Melt the honey, peanut butter and sugar in a non-stick pan.
Sprinkle in the cinnamon, salt, nuts and seeds.
Give the mixture a good mix, being very careful as the caramel is very hot.
Spread out onto tin foil or non-stick paper and allow to cool.
*N.B I have been playing around with the consistency, if you add more sugar and less honey the caramel will set really hard, I like mine to just coat the nuts so it is still quite soft. Try throwing some fruit in the mix as well or dried banana chips!!!
