Polenta or cornmeal?
They are the same thing, look out for cornmeal in your shops, whack some milk, water or stock through and you have polenta. Now you have no excuses when you are in a rush. This little banger is sooooooo good. I bloody love polenta you can knock it up really quick and throw lots of goodies in their like chilli and rosemary.
Chicken with polenta and asparagus
Serves 1 (hungry person) – 15-20 minutes
- splash of oil
- 2 chicken breasts
- 80g cornmeal/polenta
- knob of butter
- 10-15 pieces of asparagus
Whack some oil in a frying pan and start frying your chicken breast.
Meanwhile make your polenta, bring water to the boil in a saucepan. Roughly 4 times the amount of water to polenta. Pour in your cornmeal and stir with a whisk over a low heat. Keep mixing for 4-5 minutes adding more water if too thick. Finish with some salt and pepper and a knob of butter.
Throw your asparagus in the pan with the chicken and cook for 4-5 minutes.
Dollop the polenta on a plate and serve with the asparagus and chicken.
*N.B marinade big batches of meat ready for cooking to add some nice flavours to your meal. For extra indulgence use stock or milk for the polenta, with some parmesan mixed through. There will be plenty of polenta variations coming soon.
