Beans beans are good for your heart….

Why beans?

When I first got into endurance sports I became obsessed with beans – you name the bean and I have probably had it! I would make a huge batch of this recipe and just have it in the fridge. Whack some fresh spinach through it, maybe a poached egg and scoop it all up with some crusty warm bread. Its the ultimate mix of protein and carbs for all you vegetarians out there.

Mart’s bean bowl

Makes a big batch – 20-30 minutes

A beautiful bowl of hot bean stew.


  • olive oil
  • 2 onions
  • 2 garlic gloves
  • 1 red pepper
  • 2 tsp smoked paprika
  • 1 tsp cumin
  • 1/2 tsp cinnamon
  • 1 tin of kidney beans
  • 1 tin of cannellini beans
  • 1 tin of chickpeas
  • 2 tin’s of chopped tomatoes
  • fresh coriander
  • good handful of spinach


Whack some oil in a large saucepan then gently fry your roughly chopped onion, garlic and red pepper until just turning soft. Now throw in all your spices, beans and tinned tomatoes.

Simmer this mix for 15-20 minutes or until the mix is nice and thick – feel free to add more spice and season with salt and pepper to taste.

Stir through your spinach and coriander until the spinach has wilted. Serve your beans with a good wedge of warm crusty sour dough.

*N.B why not try serving up your beans with a poached egg and some avocado. Swap out the beans and try with other beans like butter beans, adzuki beans or even throw some lentils in there.
