These pancakes are the easiest thing to make and they taste soooooooo good. Known in the fitness world as protein pancakes – im going to be hip and call them gluten free pancakes!
Gluten free pancakes
Serves 2 – 10 minutes
- 2 bananas
- 2 scoops of protein powder (roughly 100g)
- 4 eggs
- Drizzle of olive oil or butter
- Good dollop of yoghurt
- Fresh fruit – Strawberries, blueberries, raspberries
Super easy, get yourself a bowl mash your banana keeping a few chunky bits. Whisk together your eggs and protein powder then whack in the bowl with the banana.
Heat a non-stick pan and heat your oil or butter, carefully spoon in your mixture into small pools. Cook for 1-2 minutes each side or until nice and golden.
Pile up on a plate, dollop on the yoghurt and scatter over the fruit!
* N.B why not throw some of your fruit into the pancake mix so you have chunks of fruit. Cinnamon is banana’s mate get some of that in there.
